Old-time Crank Ice Cream Maker

When I was a kid, my family had a crank-style ice cream freezer used to make home made ice cream. Someone turned the crank continuously while another alternately added layers of cubed ice and rock salt around the freezing can. We had to keep that can and internal dasher (paddle) spinning continuously for 30 minutes. It was hard work!

In order for the ice cream to form, the ice cream mix needs to churn in a very cold environment. Hence the need to surround the freezing can with ice while it’s being mixed. The rock salt lowers the temperature at which ice will freeze, making the ice melt more slowly.

In the end, we had sore arms and lots of salty ice water to dispose. Plus we needed to be careful opening the freezing can to avoid getting ice water in our sweet confection.

No need for a hand crank ice cream freezer, lots of ice and rock salt to make homemade ice cream these days. You don’t even need buff arms! Churning is done by a machine powered by electricity. The freezing can just needs to be frozen in the freezer a minimum of 24 hours before use. (Yes, that’s the freezing can you see in our The Green Cottage freezer!)
